Sweet Potato & Kale Salad

The weather is warming up and it makes me excited to start making fun salads again. Yes, winter & cold weather bring me little inspiration to make a salad, lol!


This salad is full of nutritionally dense foods with each bite having a sweet little aftertaste to it, making it a great change up to your ordinary go-to salad.



What you will need:

Salad ingredients-

3 sweet potatoes

1/2 tbsp olive oil

1/4 tsp cinnamon

1/4 tsp salt

3 cups chopped kale or spring mix

1 large apple

1/4 cup pumpkin seeds (Pepitas)

1/4 cup dried cranberries

1/4 cup chopped walnuts or almonds

1/2 cup feta cheese or blue cheese


Homemade Dressing ingredients:

2 tbsp apple cider vinegar

1/2 cup olive oil

2 tbsp maple syrup

1 tbsp dijon mustard

1 tbsp lemon juice

1/2 tsp salt

1/4 tsp pepper


Directions:

- Preheat oven to 375 degrees F.

- Cut sweet potatoes into cubes, place in bowl- add olive oil and cinnamon- mix together then spread out on baking sheet.

- Roast for 35-45 minutes, stirring halfway through, until sweet potatoes are fork tender.

- While the sweet potatoes are cooking, chop your kale and add it to a large bowl.

- Next prepare your dressing*: In a small bowl add the following: apple cider vinegar, olive oil, dijon mustard, maple syrup, lemon juice, salt, and pepper- whisk until smooth.

- Pour dressing all over the chopped kale and use your (clean) hands to gently massage the dressing into the kale for a few minutes. This helps remove any bitterness from the kale and adds flavor the the leafy green.

- Add your chopped apple, dried cranberries, chopped almonds. Stir together. (Tip: To keep feta or pumpkin seeds crunchy, don't add until you are ready to eat)

- Once sweet potato cubes are done cooking, let cool and add it to the kale.

Pour into 6 salad bowls, or 1 large bowl for sharing.

- Before you serve the salad, top with pumpkin seeds and feta.

*to make it easier, you can omit the homemade dressing and replace it with a vinaigrette dressing.
