Southwestern Pork Salad

Need to change up your original salad routine? Want something with great flavor that you can use on a bed of spring greens or in a wrap?


This is it!!


This Southwestern Pork Salad is bound to be a crowd favorite and is very versatile for meal prep.


Here's what you will need:

  • 1lb cooked pork tenderloin*

  • 1 can pinto or black beans

  • 1 medium onion

  • 1 large green pepper

  • 1 tomato

  • ½ cup sliced olives

  • ¼ cup apple cider vinegar

  • 3 tbsp olive oil

  • 2 tbsp honey or maple syrup

  • 2 tbsp minced parsley

  • 1 tsp ground mustard

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • ½ tsp salt

  • Spring Mix

*You can sub with any protein source- chicken breast, turkey tenderloin, etc.


Directions:

In a large bowl combine, cooked pork tenderloin diced up, rinsed pinto beans, chopped onion, chopped pepper, diced tomato, & sliced olives.

In a small bowl whisk together apple cider vinegar, olive oil, honey, minced parsley, ground mustard, ground cumin, dried oregano, & salt.

Add dressing to large bowl and combined. Chill for 4-6 hours. Add to a bed of spring mix, rice, or wrap with some cheese!
