Burger Bowls!

Who doesn't love to indulge in a delicious, juicy burger? How great would it be to have a meal prep option that is easy to take with you and also a little friendlier on calories?

If this is you, try out this burger bowl recipe- you won't be disappointed!


What you will need:

1 lb ground beef

- 1 tbsp garlic, minced (4 tsp garlic powder will work too)

- 1/2 tsp onion powder

- 1/4 tsp dried oregano

- 1 tsp oil (avocado, coconut, olive)

- 1 bag spring greens mix (shredded romaine lettuce will work too- I just enjoy the extra nutrients you get from spring greens mix)

- 1 container grape/cherry tomatoes

- Pickles (hamburger or bread & butter ← My personal favorite)

- 1 red onion

- 2 avocados

- 1/2 tbsp lemon juice

- 1/2 tsp salt

- Shredded cheese of choice

- Sauce of choice: BBQ, Ketchup, mustard, avocado mayo

Optional: Rice & other tops you enjoy on your burgers!


Directions:

  • Brown 1 lb of ground meat, adding in garlic, oregano, onion powder

  • In separate pan take oil and chopped red onion, heat till soft and caramelized

  • While meat is browning, take 2 avocados and mash in bowl adding lemon juice and salt.

  • To assemble your burger bowl, add a bed of green on bottom, add ground meat, and then top with toppings of choice- pickles, fried onions, cherry tomatoes, shredded cheese, and sauce of choice

**To add more carbohydrates to this meal you can use a bed of rice in replace of or in addition to bed of greens.
